LAUTERING
After the mash’s starches have converted to simple sugars and
all the colors and flavors have leached from the grist the entire mash is
pumped over to the Lauter Tun. The Lauter Tun separates the spent grain solids
from the wort through a screen like bottom. More hot water is gently
sprayed over the mash bed to rinse out any remaining sugars and flavors.
This process is called spargin. The spent grain solids are sent off to dairy
farms for feed.
