MASHING IN


The grist is mixed with hot water in the mash tun.  Natural enzymatic activity converts the barley starch into simple sugars such as glucose and maltose.  During this step all of the colors and flavors from the different types of malt are leached out creating a sweet, flavorful and colorful extract called wort.
